I love the Caribbean. I love the turquoise water, the white sand beaches, the island music, the sailing, the snorkeling, and the rum cocktails. I could go on and on. When my budget doesn’t allow for a trip to the Caribbean, I bring the Caribbean to me. My husband and I make Painkiller cocktails at home while listening to reggae music. A Painkiller is made with rum, pineapple juice, coconut cream, orange juice, and served on the rocks with nutmeg sprinkled on top. Rumor has it, the Painkiller originated at the Soggy Dollar Bar at White Bay in the British Virgin Islands. It’s now a staple in the boating and sailing communities of the Caribbean and beyond, including my hometown of Annapolis! Here’s the recipe for the Painkiller:
2 oz rum
4 oz pineapple juice
1 oz orange juice
1 oz coconut cream
My husband and I usually triple this recipe for the two of us to enjoy at home. Don’t forget to use Pandora or your local cable provider’s streaming music channels to find the best island music! Enjoy!
